Simple Salad with Beans

4 cups of greens (baby spinach, mixed greens, or romaine lettuce)

1 can kidney beans, drained and rinsed

½ cup shredded cheese (optional)

bottled dressing or your own olive oil and vinegar

Purple Cabbage Salad

½ head purple cabbage, shredded

4 carrots, grated

4 green onions, chopped

½ bunch cilantro, chopped

3 tablespoons apple cider vinegar

2 tablespoons canola oil

1 tablespoon lemon juice

salt and pepper to taste

In a large bowl combine cabbage, carrots, green onions and cilantro. In a smaller bowl whisk together apple cider vinegar, oil, and lemon juice. Toss dressing with vegetables. Season with salt and pepper to taste. Serves 6.

Snap Pea Salad With Radish and Lime

2 cups sugar snap peas, trimmed & halved

3 cups green beans, cut into 1-inch pieces

3 tablespoons lime juice

2 tablespoons olive oil

½ cup cilantro, chopped

10 radishes, trimmed and thinly sliced

salt and pepper to taste

Steam snap peas and green beans in the microwave or in a large pot over 1-inch of boiling water until crisp tender, about 4-5 minutes. Drain through a colander and run under cold water. Transfer to refrigerator and chill for about 20 minutes. Whisk lime juice, olive oil, cilantro in large bowl. Add snap peas, green beans, and the radishes. Toss to coat and season with salt and pepper to taste. Serve chilled. Serves 4.

Cook like a Chef: Steamed Vegetables

Stove method: Place vegetables in a steam basket over an inch of water in pot. Cook until just tender. Do not overcook. Immediately transfer the vegetables to a colander containing ice cubes. Stir to cool quickly and evenly. The quick cooling will keep the colors of the vegetables bright. Microwave method: Place vegetables in a microwave safe dish. Add a couple of tablespoons of water and loosely cover the dish. Cook until just tender, 2-3 minutes on high. Then transfer to ice (see above).
